Haven’t Souffled For a While!

Very pleased with my souffle’s!

I’ve taken to Googling recipes, now that I can no longer read the print in recipe books.

I took a bit of a chance with this, making it with all lactose-free ingredients, but it was nicely firm on the crust but moist (not wet) inside and the flavour: lactose free ready-grated three cheese mix from Aldi, plus a sprinkle of grated parmesan, with some Dijon Mustard was tantalising. Not bland at all. Left out the paprika. It had a very pleasant texture on the tongue.

Important: instead of butter I used Coles Olive Oil Spread which I trust is lactose free but the pack says it does contain some milk solids. However it never seems to affect my lactose-intolerant guests.

Dried grated bread crumbs sprinkled on to the sides and bottom of the ramekin (Aldi breakfast bowl in yellow) helped keep the shape but were not noticeable in the coked souffle. The secret to the pleasing risen shape is to run a clean finger around the top of the mix next to the bowl edge before putting in the oven.

We had it with a not-too-sweet mango chutney on the side.
